آشپزخانه خوب (Fair Kitchens)

If you are feeling overwhelmed by the need to create better HR practices, sexual harassment protocols and get your team out of the mindset that anything goes in the restaurant industry (and do all of that while running a restaurant) you aren’t alone. But a few small steps might be the best way to start tackling the beast of changing restaurant culture, and the Fair Kitchens movement is a place to start.

Fair Kitchens is a program launched by Unilever Executive Chef Einav Gefen, after research showed that the stress of running a kitchen and restaurant was making it unsustainable for many chefs and cooks to stay in the industry.

“Our global team did research, and came up with all these statistics about depression and substance abuse, and that the majority of people working in restaurants believe they won’t fulfill themselves professionally with what they do,” Gefen says. “They showed me the results, and I was like, ‘Really, you paid for this? I could have told you that.’ But it got me thinking. If we want to free chefs up to do what they love to do with food, we have to go deeper. I felt particularly passionate about it, and knew there was something we could do to help.”

Gefen reached out to food writer Kat Kinsman, founder of Chefs With Issues, a website devoted to helping chefs deal with depression and other mental health issues, and chefs including Michael Gulotta of New Orleans’ Mopho and Maypop.

“We needed chefs who do it day-in and day out,” Gefen notes. “I’m a chef, but have been out of a restaurant kitchen for a decade.”

“Einav and I talked at Worlds of Flavors about a lot of these problems facing the restaurant world, and a few months later, she reached out to me and said she was starting this group,” Gulotta says. “Unilever has the resources to do this; it means there is someone working on this as their job. When you’re trying to keep your business afloat, things like this are all volunteer, and you don’t really have the time for them. The things we are trying to fix are the things that are holding us back from fixing the problems.”
